what about adding swimming every day. good on your knees. MY OPINION is you need cardio, brother.
 
Your body will not like you if you eat one meal a day. Your body needs the energy to burn the calories. A more realistic approach that worked for me was to eat a big breakfast. I know few people who have lost weight who skips breakfast. Breakfast is important as it will give you the energy to burn off calories throughout the day. Ideally you want dinner your lightest meal and do not eat within 3-4 hours of bedtime (empty calories). I guarantee if you did this, cut out fast food, and quit pop (diet included) and drank water instead - you will notice a difference.
 
Exercising - I would recommend something simple like walking around the block or using a treadmill. It should be low-impact, but something to raise your heart rate. Get a good pair of walking shoes. Start small, 15-20 minutes 3-4 times a week, then bump it 10-15 min longer.
