Tonight was my own concoction for dinner with season grilled squash and Seasoned french fries.
The main course was a spicy chipotle Burger. The actual Burger part of the recipe calls for chipotles in Adobo sauce, which I couldn't find any of at the market so I had to substitute, and it still turned out pretty good. This is something I will not provide exact measurements for, as you should season to taste, in general, you would use 1-2 tablespoons of each ingredient.
Cayenne Pepper
Adobo seasoning
Season all Salt (I use Lawreys)
Cajun Seasoning
Hot peppers (from a jar, i.e. Paste crushed red peppers in a jar)
diced/finely chopped green onions

Mix above ingredients with a pound of ground beef or ground turkey, grill or cook stove top.

Swiss Cheese, thin sliced, Cilantro and parsley, fresh sliced mango, and salsa.

Lightly toast buns, Place a few tablespoons of salsa on bottom bun, then burger, then slice of Swiss cheese, sprinkle with cilantro and parsley, then top with slices of fresh mango.

I love love love how the sweetness and coolness of the mango offsets and compliments the hotness and spiciness of the burger. It is just lovely. I also like to have a little extra Mango on the side.

The burger is very flavorful, so your sides should be mild, mine were too spicy, next time I would go with a cucumber salad and idk what else, if anything else.

Roasted red pepper chicken, asparagus, cuccumber salad, and fresh bread.
I used 4 ounces to much sour cream in the cucumber salad.
Roasted peppers and chicken:
place peppers on grill or directly on lit gas stove till burned, peal away outer skin, take out seeds, and slice. prepare chicken to your liking.
Cucumber Salad
2 cucumbers thinly sliced, halved if you like (I take off the skin for Steve, but you don't have to)
one onion, slivered
2 ounces sour cream
2 table spoons white vinegar
1-2 tablespoons dill
salt and pepper

Mix it all together and stick in the fridge to chill. the longer you chill it the more flavor you'll get. A lot of recipes also call for a tablespoon of sugar, I never use any though.

Thinking about baking a cake this weekend. I LOVE to bake too, and haven't baked anything in a long long time because Steve isn't big on sweets and there is no way I'd eat it all myself. I will likely take some to the girls next door that tend the bar. I am certain they will enjoy or one of the customers. I don't care who eats it, I just want to make it.
 
Asparagus Rolls with Prosciutto and Basil Ricotta Cheese

One package Prosciutto has about 5 slices of meet. So divide your bundle pf asparagus up accordingly. Place asparagus one to two inches from the end of the slice of prosciutto. Sprinkle with salt and pepper. Place about one tabelspoon of Ricotta Cheese ontop of asparagus, and 1/2 tablespoon of cream cheese ontop of that. Roll. Repeat. Bake in oven at 350-425 degrees, roughly 10-20 minutes per side, or until crispy.

Personally, I smelled the prosciutto raw, and it was just gross. Once cooked, I cut this into three bites, and it was so good!!!! didn't think I would like this at all, and it's totally delic!

Oh thank god for this thread, it's my little online cook book, I was trying to find a recipe that I wanted to make for dinner tonight, and couldn't find it...and then I remembered I post like everything here! Thank gosh!
 
Awesome. I keep thinking that with all this time on my hands..especially during the winter, I will learn to cook. Actually I know how to cook...I just don't do it..kind of a running joke with me and my friends. I will try to replicate some of your dishes however..look good!
 
IAG, I love cooking! Start with a simple dish and go from there.

Coug has some good recipes too.

Cooking and baking for me, are a wonderful and enjoyable way to take my mind off of things, though I don't bake much anymore...but I should.
 
I don't know why I don't. I guess when it's just mom and I now (and we eat different things) it doesn't seem feasible. I think it's probably much cheaper for me to buy things premade or from the deli...not as much fun or healthy though. For example, was going to make a homemade pizza a few weeks back. When I thought about buying the stuff for crust, sauce, cheese, toppings etc...it seemed easier and cheaper just to buy a frozen one, which I did. Plus if I cook a main dish, then I am "stuck" eating it for the rest of the week it seems. I'm sure there are some recipes out there for one person meals...just have to look around. On a related note, I bought a bag of clementines a while back and ended up throwing out half that went bad before I could eat them. So wasteful. Maybe I just need to plan better.
