Camera is deader than dead. Going to document the pork stage by stage for everyone.

Also post any crock pot (or pot crockett) recipes you may have accumulated over the years. I need new stuff to try for football season.

Stage 1

Bought pork roast from deli (wanted to mix it up a bit with a different cut). Cut two large Spanish onions so they lay flat on the bottom of the crock pot. Pork is placed directly on top with the fat side facing up. Set on low heat.

Stage 2

The ends of the onions should be chopped up and placed in the fridge. They will be added along with the following spices:

Basil
Garlic (or garlic powder)
Ginger
Chipotle Pepper
Cayenne Pepper
Black Pepper
Oregano
Onion powder
Olive oil

I prefer a smokey BBQ sauce. This is Smoky Jon's award-winning BBQ sauce from Madison, Wisconsin.

Now that we are all set, the drinking can begin.
 
Snuttynose Pumpkin Ale 7/10

Nice head, good lacing, not as much pumpkin as I like, much more like a spiced beer with pumpkin notes. Could be a good session beer, pretty easy drinker.

I am a big seasonal drinker, and as the weather is starting to change my beers will also change with those seasons. One of my favorite beers of all-time is Dogfish Head Punkin Ale but they will not be carrying it in Illinois or Wisconsin because of their lack of ability to meet the demand for this particular beer. Anyone who has access to Dogfish Head (probably anyone in New York could get it) I will pay double the price for you to ship it to me.

Southern Tier Porter 6.5/10

Pretty balanced, but not much smoke in the nose. Lacking in body. I look for a big bold body in a porter and this one just disappoints. Porters are tricky. I am not sure if they are more difficult to make, or if it's a thing where I find that they aren't very consistent. Slight head, minimal lacing. Lacks carbonation. Southern Tier is a company I expect a lot out of, maybe that's why the low score. Perhaps my expectations were too high.

Stage 3

We have what appears to be an on-schedule pork roast cooking to perfection in the pot crockett. The reason we face the fat up towards the top is that the fat will cook into the meat, giving us a more tender pork roast. The remaining grease has cooked off and is sitting helplessly at the bottom of the pot where it should be (underneath the onions and not cooking our precious pork to higher temps).

Mikkeller Koppi Coffee IPA 7.9/10

Cloudy color, nice carbonation, good balance. Lots of sweet caramel in the nose, more than the coffee in fact. Plenty of head, good lacing. But not really what I expected. Maybe the color threw me first, but I expected a coffee punch here, and didn't get it. And for $12.99 a bottle I wanted to be blown away. Mikkeller is a great brewery but their Weasel is way better. Actually they have a bunch of good beers. Overpriced, probably.

Chicken Salad (w/grapes and walnuts)

  • 2 chicken breasts, cooked and cubed
  • 2 stalks celery, finely chopped
  • 1 Tbsp. onion, minced
  • 1 small bunch of red grapes, chopped
  • 1 handful of walnuts, chopped
  • 1 cup of mayonnaise
  • 1/2 lemon, juiced
  • salt and pepper to taste

  1. Cube chicken and put it in a bowl.
  2. Clean two celery stalks and cut into very thin vertical strips, chop and put it in the bowl with the chicken.
  3. Add minced onion to the bowl.
  4. Cut grapes into quarters and add to the bowl.
  5. Add walnuts to the bowl.
  6. Add one cup of Hellmann's to the bowl.
  7. Squeeze the half lemon into the bowl.
  8. Mix everything together and add salt/pepper.

You can put it on bread, in a wrap or on a bed of lettuce.
