What are healthy meal options for satisfying a hangover?

IAG's redbeer, maybe some eggs with onion, spinach, and tomatoes. Or a BLT, no mayo. TOMATOES are the key here. The folate and B12 (or any other B vitamins) is what your body needs. The goal is to re-hydrate and nourish your body. Gatorade, powerade, or pedialyte is good for replenishing your electrolytes. These are all things I do, usually before I go to bed, and again in the morning and very rarely end up with a hangover.

As for energy, I usually have a black chai tea, or sugar free redbull, if I try coffee when hungover - it makes me sick. I would recommend the chai tea, contains as much caffeine as coffee, but is better for the body and mind.
 
Green tea instead of coffee. It has some caffeine and also rehydrates... My older brother takes a bunch of Psyllium fiber when he drinks to counteract the rotgut. I like pineapple juice too if it can sit in the tummy.
