Merriam has the secondary pronunciation with a hard "o" like the sound at the end of "throw." I have no reason to doubt the acceptability of a Merriam secondary. That said, I personally try to always use primaries.

I pronounce it "vietnamese" and avoid the issue altogether.

The tendon has a good beefy taste and is sticky and chewy,not like gristle at all. Yummy and nutritious. I don't get it every time.
