I think moderator editing w/o showing an edit is pretty standard. At least it was several years ago when I modded a few forums.

It shouldn't be standard. Whomever has Admin access needs to change the permissions for the Moderators. It is best to keep them as locked down as possible, only utilizing them to moderate the board, not fuck with posters.
