The chefs didn’t pay attention to food cost. After I fired the head one, I found out he was spending roughly $1500-$2000 more than he had to a week on food.

I found out late to the game though

Yes, I’m going to own it in this one though. The guy I had was a very good chef. Extremely temperamental and abusive to staff. I had to let him go.

He ordered the proper food. Wasn’t stealing. The thing was when I began doing the ordering after I fired him, I found we could’ve gotten the SAME food for a lot less.

It’s on me for not diving deeper into his ordering habits earlier. All my fault.

We had multiple vendors. He wasn’t getting a kickback. Not that bright. He was just lazy when ordering.

Like I said, it’s my fault not diving into it months ago.
