Completely even, you never have to flip it. The grease in the pan hardens and is much easier to clean up than in a pan. If you like yours less done just take it out sooner. I leave mine in 20-22 minutes. 400 degrees, and do not preheat.

Cougs you use parchment paper. You actually do not have to clean the pan after.

nothing overly fancy, but i eat the wrights applewood smoked...

i saw at costco that they have a double 2lb. pack of Farmers applewood smoked for about $12.50 which seems like a really good deal for 4lbs....considering the Wrights runs about $7.50 for 1 1/2lbs
