I went there about 10 years ago. Here's what i remember. It was super cold. The public transportation is efficient, clean and safe (but not overly modern). Outside of hospitality, not a lot of English spoken. We were only there for 3 nights I think.
We went to Toyosu fish market (tuna auctions) instead of Tsukiji (more tourist/retail) and honestly I might have preferred the more touristy one... Toyosu was neat and there's still food and stuff, just very business like.
Went to a temple, very cool. There are tons of them, just go to one that's not far out of the way.
As far as food goes we enjoyed just eating in the train station. I know we went to some fancy place but honestly just slurping noodles and stuffing our faces on hand rolls in the train station on a weekday watching the hustle and bustle was the best.
I'm sure I'll think of more as time goes by, will try to post some specifics.
